Veg Out – Two Recipes

As promised, here we go with two very veggie recipes I like very much :)

The first one is the perfect for breakfast. You also may use it as a dip for chips or vegetables. Just add some garlic and you have a wonderful party dip as well :D

Veggie’s Delight Breakfast Spread

  • 100g of feta cheese (low fat)
  • 3 table spoons of cottage cheese
  • 3-5 table spoons of milk
  • cucumber (1/4)
  • chives
  • salt and pepper

Mash feta with a fork till you have tiny bits. Add the cottage cheese and mix it in. Add milk to your liking, stir until the mash is kinda smooth. Get out your vegetable grater (or use a knife) and rasp the cucumber. Mix it under the mash, add chives for your liking, season with salt and pepper. It tastes excellent with whole grain bread. Enjoy!

Now this is my feel-good-food. There is nothing bad in the world that this chili can’t cure! Okay, now this is a lie but that is what soul food is all about, eh? Making you believe everything is better with it ;).

Chili con Tofu

For 3-4 servings

  • 2 tins of Kidney beans
  • 200g smoked tofu
  • 1 bell pepper
  • 1 onion
  • 100g tomato paste
  • 1/2 tin of corn
  • 1 cup of vegetable stock
  • chili powder
  • salt and pepper

Chop onions, bell pepper and tofu to little bits and sauté in a big pod with a little salt and chili powder for a few minutes. Add kidney beans (incl the liquids from the tin), corn (drained) and vegetable stock and let it cook for a while. Add tomato paste (you might wanna add a little more or less than 100g, I never measure it), mix in some chili powder and season with salt and pepper. Serve hot with bread. Yummy!
